Sweet Potato Muffins

1cup sifted all-purpose flour

1tsp. baking powder

1/4 tsp. soda

1/2 tsp. salt

1/2 tsp. cinnamon

1/4 tsp. nutmeg

1 egg

1/2 cup mashed sweet potatoes

1/2 cup sugar

1/4 cup milk

2 Tbsp. butter or margarine, melted

1/2 cup chopped pecans

Sift together flour, baking powder, soda, salt. cinnamon, and nutmeg.  Add pecans and set aside.  Combine sweet potatoes, sugar, milk, egg and butter in mixing bowl.  Add liquid to dry ingredients and stir until all are moistened.

Fill muffin tins lined with baking papers 2/3 full.  Bake at 350º for 25 minutes. Makes 12 muffins that freeze well.
